CABERNET SAUVIGNON-MERLOT

Region:

Central Valley, Chile
Grape Varieties: 70% Cabernet Sauvignon, 30% Merlot.
Production Technique: The fermentation takes place in stainless steel with selected yeast at (82-86˚F) with a program of pump-overs to encourage concentration and elegance in the finished wine. Malolactic fermentation takes place naturally in French and American oak (60%) and stainless steel tanks (40%).
Characteristics: Color: Deep ruby red.
Bouquet: Ripe fruit aromas such as cherries and strawberries mixed with a bit of cream and mocha.
Taste:Smooth and juicy with good volume and well rounded tannins, balanced acidity and a long finish.
Alcohol Content: 14.5%.
Total Acidity: 3.39 g/l.
Ideal with your finest white or red meats cooked on the grill such as pork chops and steaks.

Carmenere-Cabernet Sauvignon

Region:

Colchagua Valley, Chile
Grape Varieties: 80% Carmenere, 20% Cabernet Sauvignon.
Production Technique: Fermentation takes place in stainless steel tanks with selected yeasts. Malolactic fermentation occurs naturally in oak barrels (60%) and stainless steel (40%). The wine is then aged in oak and stainless steel for 10 months at controlled temperatures.
Characteristics: Color: Dark and deep red.
Bouquet: Attractive aromas of black fruit.
Taste: Rounded, well-balanced with rich tannins and great acidity.
Alcohol Content: 14.4%.
Total Acidity: 4.55 g/l.
This wine is ideal with dark, full textured fish like mahi-mahi, white meats and mild sauces.

CHARDONNAY

Region:

Casablanca Valley, Chile
Grape Varieties: 96% Chardonnay, 4% Viognier.
Production Technique: Fermentation occurs in French oak barrels and stainless steel tanks respectively. Half of the finished wine is then aged in French and American oak barrels for 5 months and the remainder spends
5 months in stainless steel.
Characteristics: Color: Straw yellow with greenish reflections.
Bouquet: Complex aromas of mineral and honey.
Taste: A crisp and juicy wine with tropical and citrus fruits that offer balance and an elegant finish.
Alcohol Content: 14.4%.
Total Acidity: 4.55 g/l.

Novas Chardonnay is ideal with white meat, shellfish and fresh cheeses.
